Ingredients
- ½ cup butter
- ¾ cup brown sugar
- 2 TBSP white sugar
- 1 large egg
- 2 tsp vanilla extract
- 1 ¼ cup flour
- ½ cup unsweetened cocoa powder
- ½ tsp baking soda
- ¼ tsp salt
Peppermint Bark
- ½ cup semisweet chips
- ½ cup white chocolate chips (or almond bark)
- 1 TBSP crushed peppermint
Buttercream Frosting
- ½ cup butter (1 stick ) softened
- 4 cups powdered sugar
- 3-4 TBSP milk
- 1 tsp vanilla extract
- ¾ tsp peppermint extract
Instructions
-
**Cookie Dough:** In a large mixing bowl, beat the butter and sugars, with a whisk or electric handheld mixer, until light and fluffy. Add in the egg and vanilla extract, mix until combined.
-
Stir in the flour, baking soda, cocoa powder, and salt until the mixture forms a dough. Place the dough in the refrigerator and chill for 30 minutes before proceeding with the baking.
-
**Prep:** About 20 minutes into the dough chilling process, start preheating the oven to 350 degrees F. Line a baking sheet with parchment paper or silicon mat and set it aside.
-
**Bake:** After the dough is done chilling, separate the dough into 6 balls and place them onto your prepared baking sheet. Bake in the preheated oven for 10-12 minutes. Let the cookies cool on the baking sheet for about 10 minutes before transferring to a wire cooling rack to cool completely.
-
**Peppermint Bark:** In a microwave safe bowl, melt your semisweet chocolate chips in the microwave in 30 second intervals, stirring until melted and smooth. Repeat the process with the white chocolate in a separate bowl.
-
Thinly spread the semisweet chocolate out onto a piece of parchment paper and then spread melted white chocolate over the top of that. Sprinkle the top with crushed peppermint candies and set aside to set.
-
**Buttercream frosting:** In a large bowl, whip the butter with an electric mixer. Add in the powdered sugar, vanilla extract, and peppermint extract. Whip again to combine. Add the milk and beat again until the frosting is light and fluffy.
-
**Assemble:** Transfer the buttercream frosting to a ziplocked bag with the corner snipped off or a piping bag with a round tip. Pipe the buttercream in a swirl pattern on top of each of the cookies. Break the peppermint bark into pieces and place them on top of the cookies. Serve and enjoy!

Essential Christmas Cookie Baking Tips
Baking for the holidays can be a joyous experience, and a few simple tips can ensure your Christmas cookies turn out perfectly every time. Here are some answers to common baking questions that will help you achieve delicious results.
How do I soften butter correctly for cookies?
Softening butter is crucial for many cookie recipes, as it helps create a smooth, creamy dough and evenly incorporates sugar. The easiest and most recommended method is to remove a cold stick of butter from the refrigerator and let it sit at room temperature for 30 to 60 minutes until it becomes pliable and slightly spreadable, but not melted. The exact timing will depend on your room’s temperature and how cold the butter was to begin with. If your butter starts to get too soft or oily, place it back in the refrigerator for a few minutes to firm up slightly before you’re ready to use it.
For quicker softening, you can cut the butter into smaller pieces; these will reach room temperature much faster. Another alternative is to carefully microwave the butter. Place it in a microwave-safe dish and microwave on 30% power (often labeled “defrost”) for 15 seconds. Check its consistency, and if needed, repeat in 5-10 second intervals. It’s important to avoid using full power, as this often results in unevenly melted butter, which can negatively impact your cookie’s texture.
How do I keep my cookies from going flat during baking?
Flat cookies are a common baking frustration, and several factors can contribute to it, including too little flour, insufficient baking soda, excessive butter, or too much sugar. Fortunately, there are several troubleshooting steps you can take to achieve perfectly plump cookies:
- **Adjust Fat Ratio:** Try using a mix of half butter and half shortening. Shortening has a higher melting point, which can help cookies maintain their shape during baking.
- **Reduce Sugar:** Sugar melts and spreads when heated, contributing to flatter cookies. Slightly reducing the amount of sugar in your recipe can help.
- **Check Oven Temperature:** An inaccurate oven temperature is a frequent culprit. Use an oven thermometer to ensure your oven is preheating to the correct temperature. If it’s too low, cookies will spread before they set. You might need to bake them a few minutes longer or increase the temperature by 25 degrees F.
- **Chill Your Dough:** Chilling the cookie dough for at least 30 minutes, or even overnight, significantly helps prevent spreading. Cold dough takes longer to heat up in the oven, giving the butter less time to melt and spread.
- **Use Cooled Pans:** Always place your cookie dough on cooled, clean baking sheets. Placing dough on a warm pan will cause the butter to melt immediately, leading to early spreading. If baking multiple batches, let your baking sheets cool completely between uses, or have several ready to go.
By implementing these tips, you’ll be well on your way to baking beautiful, perfectly shaped cookies that will be the talk of the holiday season!

We hope this comprehensive collection of easy Christmas cookie recipes inspires your holiday baking adventures. From rich, spiced gingerbread to refreshing peppermint treats and classic sugar cookies, there’s a recipe here for every taste and skill level. Happy baking, and may your holiday season be filled with joy, delicious cookies, and cherished memories!
