Peach Avocado Salsa

  • 2 peaches cored, and diced
  • 1 avocado, pit removed and dicedhaas suggested
  • 1/4 red onion, diced
  • 1/4 cup fresh cilantro, diced
  • juice of 1 limeplus more to taste
  • 1 teaspoon Kosher saltplus more to taste
  • 1 teaspoon black pepperplus more to taste
  • generous pinch blackened spice ruboptional

Blackened Salmon

  • 2 lbs salmonwild-caught suggested
  • 1 1/2 tablespoons avocado oilcan also use olive oil
  • 2 tablespoons blackened spice rub
  • juice of 1 lime quartered, for garnishoptional

Instructions

Blackened Spice Rub

  • To a small ramekin or bowl, combine all the listed spices for the blackened spice rub. Mix them thoroughly with a fork until they are evenly distributed. Set this blend aside. This quantity should yield approximately 1/4 cup of seasoning blend, and you may have some leftover for future uses.

Peach Avocado Salsa

  • In a medium-sized mixing bowl, combine the diced peaches, chopped avocado (Haas variety is recommended for its creaminess), diced red onion, fresh diced cilantro, and the juice of one lime. Season with 1 teaspoon of Kosher salt and 1 teaspoon of black pepper. Using a spoon, gently mix all the ingredients until they are well combined. Taste the salsa and adjust the seasonings as desired, adding more salt, pepper, or lime juice to suit your preference. This salsa can be made 1-2 days in advance and stored in an airtight container in the refrigerator.

Blackened Salmon
