- 1 small red onion sliced
- 1/2 cup corn
- 1/2 cup black beans
- 1 cup cheddar cheese grated
- 1/2 cup cilantro finely chopped
Chipotle sauce
- 1/2 cup sour cream
- 2 tbsp light mayo
- 1 tbsp chipotles in adobo sauce
- 1 tbsp water
Instructions
