TO MAKE ON THE GRILL (CHARCOAL OR PROPANE)

  • Prepare your grill for direct heat and preheat to medium-high (approximately 400-450°F or 200-230°C). While the grill heats, gently combine the ground beef and all dried spices in a large mixing bowl. Avoid overworking the meat.
  • Divide the meat mixture into 6 equal portions. Gently form each portion into a loose ball, then flatten into a patty about ¾-inch thick and 4 ½-inches wide. Using a kitchen scale for consistency (approx 1/3 LB or 5.3 ounces per patty) is recommended.
  • Create a dimple in the center of each patty using your thumb, about ½-inch deep. This helps prevent the burger from puffing up during grilling. If the patties feel warm from handling, refrigerate them for 5-10 minutes to help them hold their shape better.
  • Clean the grill grates thoroughly with a wire brush and then lightly grease them with a high smoke point oil (like vegetable or canola oil) to prevent sticking.
