Imagine sinking your teeth into a buttery, sweet, thick, and wonderfully chewy bar, each bite bursting with your favorite chocolate Halloween candy. Even if your household doesn’t typically participate in trick-or-treating, or if your little ones are past the candy-collecting age (or perhaps too young to indulge fully), you’re probably aware that Halloween candy goes on deep discount right after the holiday. This presents a golden opportunity! Seize those post-Halloween sales and grab an assortment of your favorite discounted candies. It’s a savvy way to stock up and, more importantly, a fantastic excuse to whip up a batch of these irresistible Halloween Candy Cookie Bars. It’s a win-win: you get a delicious dessert, and you save some money while doing it. This recipe is incredibly versatile, making it ideal for anyone looking to make the most of the season’s sweet spoils.

The foundation for these phenomenal Halloween Candy Cookie Bars is essentially a classic chocolate chip cookie base, but with a delightful twist: chopped candy replaces traditional chocolate chips. In my earlier attempts at this recipe, I primarily used white granulated sugar. However, in recent years, our pantry staples have shifted, and white sugar isn’t always on hand. Instead, I’ve found great success using coconut palm sugar, which is a less processed alternative with a lower glycemic index. The best part? The flavor and texture of the cookie bars remained absolutely consistent and equally delicious! Given that we’re already incorporating all-purpose flour and a generous amount of leftover candy into the mix, the most important takeaway is to use whatever sugar you have readily available. There’s absolutely no need to rush out and buy additional, specific ingredients; convenience and maximizing what’s in your pantry are key to this fun, post-holiday baking project.

What Kind of Candy Should I Use? Selecting the Best Treats for Your Bars

When it comes to choosing the right candy for these cookie bars, versatility is key, but with a slight preference for chocolate-based varieties. Any chocolate candy, roughly chopped into manageable pieces, will work wonderfully and melt beautifully into the buttery cookie dough. To ensure the best flavor profile and texture, I strongly recommend sticking to chocolate candies and avoiding anything overtly fruity or sour. While those candies are delicious on their own, their intense fruit flavors or tartness can sometimes clash with the rich, sweet cookie base, and their texture might become unpleasantly chewy or hard when baked. The goal is a harmonious blend of flavors and textures that enhances the overall experience of the cookie bar.

For my recipe, I personally used a delightful mix of the following leftover chocolate candies, which produced an incredible depth of flavor and varying textures:

  • Reese’s Peanut Butter Cups: These add a fantastic salty-sweet peanut butter element that pairs perfectly with chocolate.
  • Snickers: Bringing together nougat, caramel, peanuts, and chocolate, Snickers provide a satisfying chew and a complex flavor.
  • M&Ms, plain: Classic M&Ms offer a delightful crunch and a familiar, comforting milk chocolate taste, plus a pop of color.
  • 100 Grand: With its crispy crunchies and gooey caramel enveloped in milk chocolate, 100 Grand bars add another layer of texture and sweetness.
  • Milky Way: The smooth nougat and caramel in Milky Way bars contribute a soft, yielding texture and a classic candy bar experience.
  • Twix: The combination of shortbread cookie, caramel, and chocolate from Twix bars introduces a wonderful biscuit-like element and even more caramel goodness.
  • Kit Kat bars: The crispy wafers covered in chocolate from Kit Kat bars create interesting layers and a pleasant, light crunch.

This assortment ensured a diverse and exciting flavor in every bite. Feel free to use your own favorite chocolate candies, creating your unique combination that promises a delightful surprise in each bar.

As a last-minute addition that I now consider absolutely essential, I opted to sprinkle flaky sea salt over the top of the cookie bars immediately after baking. I cannot recommend this step enough! The subtle crunch and salinity of the flaky sea salt, such as Maldon, provide an incredible contrast to the profound sweetness of the cookie and the candy. It elevates the entire dessert, cutting through the richness and enhancing all the individual flavors, creating a truly gourmet experience. While you are the ultimate baker of your destiny, and you do you, I truly believe this small addition transforms these cookie bars from great to truly extraordinary.

I must confess, I don’t typically consider myself a seasoned baker. However, this recipe is incredibly forgiving and straightforward, making it accessible for even the most hesitant home cooks. My approach was simple: I followed the basic, time-tested guidelines for classic chocolate chip cookies and merely substituted chopped up Halloween candy for the chocolate chips. If I, a self-proclaimed non-baker, can effortlessly create these buttery, chewy, and utterly delicious cookie bars, then truly, anyone can! There’s no complex technique, no fancy equipment required—just a desire to transform a pile of candy into something magnificent. Ingredients

  • cooking spray
  • 1 cup 2 sticks unsalted butter, melted
  • ½ cup sugarcan also use coconut sugar
  • 1 cup packed light brown sugar
  • 2 large eggs, whisked
  • teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • teaspoon sea salt
  • 1 cup assorted Halloween candyroughly chopped
  • Flaky sea salt, to garnish (optional)such as Maldon

Instructions

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Line an 8-inch square baking dish with parchment paper, ensuring the paper hangs over the sides for easy removal later. Lightly coat the parchment paper with cooking spray.
  • In a large mixing bowl, combine the melted unsalted butter with the granulated sugar (or coconut sugar) and the packed light brown sugar. Use a hand mixer to beat these ingredients together until the mixture is smooth and well combined, which typically takes about 3 minutes. Then, add the whisked large eggs and pure vanilla extract, mixing on low speed until just incorporated.
  • Gradually stir in the all-purpose flour and sea salt until they are just combined into the wet ingredients. Be careful not to overmix the dough, as this can lead to tough cookie bars. Once the flour is mostly incorporated, gently fold in ½ cup of the assorted, roughly chopped Halloween candy.
  • Evenly pour the prepared cookie batter into the lined baking pan, using a spatula to smooth the top. Sprinkle the remaining ½ cup of Halloween candy over the surface of the batter, ensuring it’s distributed nicely for a visually appealing finish.
  • Bake in the preheated oven for 30-35 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs, not wet batter.
  • Allow the pan to cool completely on a wire rack before attempting to remove the cookie bars. Once cooled, use the parchment paper overhang to lift the entire slab out of the pan. Cut the cookie bars into 12-16 squares, depending on your desired serving size. For an extra touch of gourmet flavor and texture, sprinkle flaky sea salt (such as Maldon) over the top before serving. Enjoy your homemade, festive treats!
