For tomatoes: I like to use a mix of grape tomatoes and cocktail tomatoes because where I live they are the easiest to find in-season and offer a great flavor balance. If you can find fresh heirloom tomatoes or tomatoes on the vine, those would also be perfect for this recipe due to their superior taste and texture. Sungolds would also be great for a burst of extra sweetness and color.

This recipe typically makes 16-20 toasts, and will easily serve 8-10 people as a delightful Italian appetizer or side dish.
