Essential Ingredients for Your Peaches N’ Cream Cookies

Crafting these delectable peach cookie cups requires a balanced combination of pantry staples and fresh flavors. Here’s a detailed look at what you’ll need and the role each ingredient plays in achieving cookie perfection:

For the Buttery Cookie Dough:

  • Sugar: You’ll need 1 cup of granulated sugar. Beyond simply providing sweetness, sugar plays a crucial role in the cookie’s structure, contributing to that desirable chewy texture and helping the edges achieve a delicate crispness. It also aids in moisture retention, keeping the cookies soft.
  • Butter: ½ cup of softened unsalted butter is key. Butter is fundamental for creating a rich, flavorful cookie dough. Its fat content contributes to the tender crumb, prevents the cookies from becoming dry, and adds that luxurious, melt-in-your-mouth quality. Ensure it’s softened to room temperature for optimal creaming.
  • Egg: Just 1 large egg acts as a binder, holding all the ingredients together. It adds richness, moisture, and helps the cookies achieve their soft texture and slight rise during baking.
  • Vanilla Extract: 1 teaspoon of pure vanilla extract is essential for enhancing the overall flavor profile of the cookies. It provides a warm, sweet, and aromatic base that complements the peach and almond notes beautifully.
  • Almond Extract: For an extra layer of sophisticated flavor, add ½ teaspoon of almond extract. Almond pairs exceptionally well with peaches, elevating the fruity notes and adding a subtle, nutty complexity that makes these cookies truly stand out.
  • Sour Cream: A generous ⅓ cup of sour cream is a secret ingredient for superior moisture and tenderness. The acidity in sour cream reacts with the baking soda, resulting in a wonderfully soft and delicate crumb, while also adding a subtle tangy depth to the cookies.
  • Baking Soda: You’ll need ½ teaspoon of baking soda. This leavening agent is crucial for giving the cookies a proper lift and a light, airy texture as they bake, preventing them from being too dense.
  • Flour: The structural backbone of these delightful treats is 2 cups of all-purpose flour. It provides the necessary bulk and framework for the cookie dough, ensuring they hold their shape while maintaining tenderness.

For the Sweet Topping:

  • Peach Pie Filling: ½ cup of high-quality peach pie filling serves as the delicious centerpiece of these cookie cups. Make sure to cut the peach pieces into smaller, more manageable chunks so they fit neatly into the cookie wells and are easy to eat. This filling brings a concentrated, sweet peach flavor and a lovely textural contrast.
  • Whipped Cream: A dollop of freshly whipped cream is the quintessential “cream” component of these cookies. It adds a light, airy, and cool finish, balancing the sweetness of the peaches and the richness of the cookie. Use homemade whipped cream for the best flavor and texture, or store-bought for convenience.

How to Make Sweet Peaches N’ Cream Cookies: A Step-by-Step Guide

Creating these delightful peach pie cookies is a rewarding process, resulting in a treat that looks as good as it tastes. Follow these detailed steps for perfect results every time:

Step 1: Prep the Oven and Pan

Begin by preheating your oven to 325° F (approximately 160° C). This lower temperature helps the cookies bake evenly without browning too quickly, ensuring a soft interior. Next, take a mini muffin tin and liberally spray each cup with non-stick cooking spray. This crucial step prevents the cookies from sticking and makes for easy removal later. A well-prepared tin is key to perfectly shaped cookie cups.

Step 2: Prepare the Cookie Dough

In a medium-sized mixing bowl, combine the granulated sugar and softened butter. Using a hand mixer (or a stand mixer with a paddle attachment), cream them together on medium speed until the mixture is light, fluffy, and pale in color. This creaming process incorporates air, which contributes to the cookies’ light texture. Then, add the egg and vanilla extract, mixing again until just combined. Scrape down the sides of the bowl to ensure all ingredients are well incorporated. Follow this by adding the sour cream, a pinch of salt (not listed in original ingredient list, but essential for flavor balance), and the baking soda, mixing until smooth. Finally, gradually add the all-purpose flour, beating on low speed until the dough comes together and is smooth, being careful not to overmix, which can lead to tough cookies.

Step 3: Bake the Cookie Cups

Once your dough is ready, scoop out approximately 1 tablespoon of dough into each prepared mini muffin cup. For consistent sizing and a neat appearance, I highly recommend using a small cookie scoop or a rounded tablespoon measure. This technique ensures that all your cookie cups bake uniformly. You should have enough dough to make about 24 cookie cups. If you have any leftover dough, don’t let it go to waste! You can bake these additional cookies like normal on a lined baking sheet for a few minutes less, as they won’t be in a cup shape. Place the muffin tin with the cookie cups into your preheated oven and bake for 17-18 minutes. The cookies should be lightly golden around the edges. After removing them from the oven, allow the cookies to stand in the muffin tin for 1-2 minutes; this slight cooling period helps them firm up before the next step.

Step 4: Create the Wells and Cool

While the cookies are still warm and pliable in the muffin tin, it’s time to create the perfect wells for your peach filling. Lightly spray the round side of a 1 teaspoon measuring spoon with non-stick spray. Gently but firmly press the back of the spoon into the center of each warm cookie, forming a distinct indentation. This creates a neat cup shape that will hold your filling. Once all wells are formed, allow the cookies to cool completely in the muffin tin. If you’re short on time and want to speed up the cooling process, you can carefully transfer the entire muffin pan to the freezer for about 20 minutes. This helps the cookies set quickly and makes removal easier. To remove the cooled cookie cups from the muffin tin, simply slide the tip of a thin knife or a small offset spatula gently down one side of each cookie; they should pop right out with minimal effort.

Step 5: Fill & Top Your Cookie Cups

With your perfectly shaped cookie cups ready, it’s time for the delicious filling. Spoon about 2 teaspoons of the prepared peach pie filling into each cookie cup. Ensure the peach pieces are cut small enough to fit neatly. If you plan to serve the cookies immediately, you can proceed to top each one with a generous dollop of whipped cream. For convenience, these cookies can be fully assembled (with the peach filling, but without the whipped cream) up to 24 hours in advance. Store them in an airtight container in the refrigerator. Just before serving, add the whipped cream to each cookie to maintain its fresh and airy texture. Serve and enjoy these incredible peach cookie cups!

  • cup sour cream
  • ½ tsp baking soda
  • 2 cups flour

Peaches and Cream Filling

  • ½ cup peach pie filling peaches cut up smaller
  • whipped cream

Instructions

  • Prep: Get started by preheating the oven to 325° F. Then, liberally spray a mini muffin tin with non-stick cooking spray.
  • Cookie dough: Next, using a hand mixer, cream together the sugar and butter.
  • Then add in the egg and vanilla extract, mix again, and add the sour cream, salt and baking soda. Lastly, add in the flour and beat until smooth.
  • Bake: Scoop out 1 tablespoon of dough into each muffin cup. I use a cookie scoop, it makes this process so fast and I love that all the cookies are uniform size. You should have enough dough to make 24 cookie cups, plus about 6 more cookies. I baked these additional cookies like normal on a cookie sheet.
  • Place the cookie cups in the preheated oven and bake for 17-18 minutes. Be sure to let the cookies stand for 1-2 minutes after taking them out of the oven.
  • Shape: Spray the round side of a 1 teaspoon measuring spoon with non-stick spray then press down into the center of each cookie to create a well. Let them cool completely, if you need to hurry this process, feel free to stick the pan in the freezer for 20 minutes.
  • To take the cookies out of the muffin tin, I just slid the tip of a knife down 1 side and they popped right out.
  • Filling & topping: Now, spoon about 2 teaspoons of peach pie filling into each cookie cup. If serving immediately, you can top with a dollop of whipped cream. If not, cookies can be completely made and assembled up to 24 hours ahead of time and stored in an airtight container in the fridge. Top with cream just prior to serving. Serve and enjoy!

What are some variations to this delightful peach cookie recipe?

While the classic peaches and cream cookie is undeniably delicious, there are numerous ways to customize this recipe to suit your taste preferences or to utilize seasonal ingredients. Don’t hesitate to get creative in your kitchen!

  • Embrace Fresh Peaches: One popular and highly recommended variation is to use fresh peaches when they are in season. This adds an unparalleled vibrancy and natural sweetness. To prepare, simply peel and chop ripe peaches into small pieces. You can gently sauté them on the stove with a touch of sugar and a squeeze of lemon juice until tender, then cool them before adding to the cookie cups. This method offers a brighter, less processed peach flavor.
  • Experiment with Spices and Extracts: Elevate the cookie dough by adding different spices or extracts. Cinnamon and nutmeg can introduce a warm, cozy dimension, reminiscent of traditional peach cobbler. A hint of cardamom would add an exotic, fragrant touch, while a splash of bourbon or rum extract could offer a sophisticated, boozy undertone. You can also experiment with different types of sugar in the dough, such as light brown sugar for a chewier texture and subtle caramel notes, or a touch of honey for a different kind of sweetness.
  • Indulgent Add-ins: For those who desire a richer, more decadent treat, consider incorporating various add-ins directly into the cookie dough. Mini chocolate chips (white chocolate pairs exceptionally well with peaches!), chopped pecans, walnuts, or even macadamia nuts would add delightful crunch and an extra layer of flavor. You could also swirl in a spoonful of cream cheese frosting into the peach filling for an even creamier experience.
  • Alternative Fruit Fillings: While peaches are the star here, this cookie cup base is incredibly versatile. You could easily swap the peach pie filling for other fruit fillings like cherry, apple, blueberry, or even mixed berry for a different seasonal delight. Just ensure the fruit is cut into small enough pieces.
  • Garnish Galore: Beyond whipped cream, consider other garnishes. A light dusting of powdered sugar, a sprinkle of toasted coconut flakes, a drizzle of caramel sauce, or a few fresh mint leaves can add both visual appeal and complementary flavors.

When to Serve Peach Pie Cookie Cups?

These enchanting mini peach cobbler cookies are remarkably versatile and perfectly suited for a wide array of occasions. While peaches instantly evoke the warmth of summer, making these cookies an ideal refreshing treat for summer gatherings, backyard BBQs, and Fourth of July celebrations, their comforting flavors also make them a fantastic choice for cooler seasons and holidays. I’ve personally made these individual cookie cups for Thanksgiving feasts, where they offer a lighter, fruitier alternative to traditional heavy desserts, and they’ve been met with universal acclaim. Their convenient, perfectly portioned size makes them an absolute dream for entertaining. No need for cutting slices or juggling plates; guests can simply pick one up and enjoy! They are consistently a big hit at parties, potlucks, and family gatherings, with everyone always asking for the recipe. Their ease of serving, combined with their irresistible taste, ensures they are welcome at any event, making them a year-round favorite.

Do You Need to Heat the Peach Pie Filling?

This is a common and excellent question that many bakers ponder! The good news is, if you’re using store-bought peach pie filling, it is already pre-cooked and perfectly safe to eat straight from the can. Therefore, there’s absolutely no need to heat the filling before spooning it into your baked cookie cups. The beauty of this recipe lies in its simplicity and the minimal fuss involved. However, for those who prefer a warmer, more “cobbler-like” experience, you can certainly gently warm the peach pie filling on the stovetop or in the microwave before adding it to the cookies. Warming the filling can enhance its aroma and soften the peach pieces even further, creating a slightly different, but equally delicious, textural and temperature contrast with the cool whipped cream. It’s purely a matter of personal preference, so feel free to experiment and discover which way you enjoy them most!

How Long Are These Peaches and Cream Cookies Good For?

To maintain their delightful freshness and soft, chewy texture, these peaches and cream cookies should be stored properly. If kept in an airtight container in the refrigerator, they will remain delicious for up to 3-5 days. Refrigeration is particularly important due to the whipped cream topping and the moist fruit filling, which both benefit from cooler temperatures to prevent spoilage and maintain their consistency. For optimal enjoyment, it’s best to add the whipped cream just before serving if possible, though pre-assembled cookies will still be delicious. To maximize their chewiness and prevent them from drying out, always ensure they are in a tightly sealed container. For longer storage, you can freeze the baked cookie cups (without the filling or whipped cream) for up to 2-3 months. Thaw them at room temperature, fill with peach pie filling, and top with fresh whipped cream just before serving.
