  • ½ cup unsalted butter softened
  • ¾ cup dark brown sugar
  • ¼ cup white sugar
  • 1 large egg
  • Zest of 1 lime
  • 2 cups flour
  • ½ tsp salt
  • ½ tsp baking powder

Lime Filling

  • Juice of 1/2 a lime
  • 14 oz sweetened condensed milk

Lime Frosting

  • ½ cup butter softened
  • 4-5 cups powdered sugar
  • ½ cup of lime juice

Instructions

  • Preparation: Begin by preparing the lime zest and juice needed for the upcoming steps. Use the fine side of a grater to zest one whole lime for the cookie dough, then set it aside. For the filling, squeeze the juice from half of that zested lime into a small bowl and also set it aside.
  • For the frosting, you’ll need ½ cup of lime juice. Depending on the size of your limes, juice 1-2 additional limes until you have the required amount.
  • Cookie Dough: In a large mixing bowl, combine the softened butter with both the dark brown sugar and white sugar. Using an electric mixer, cream these ingredients together until the mixture becomes light and fluffy, usually for 2-3 minutes. Beat in the large egg and the reserved lime zest and mix until everything is well combined.
  • Gradually add in the flour, baking powder, and salt. Mix on low speed until just combined. At this stage, the dough will appear quite crumbly, which is expected.
  • Divide the dough into 6 equal portions to create larger cookies, or 12 portions for smaller ones. Gently flatten each dough ball. Place them onto a baking sheet lined with parchment paper, then press an indent into the center of each dough ball. A large cookie scoop works wonderfully for creating these indents.
