  • 1 cup chicken or beef stockbeef stock for richer flavor

Add the diced yellow onion and minced garlic, and sauté gently for about 5 minutes until the onion softens and becomes translucent, and the garlic is fragrant. Be careful not to burn the garlic. Add the ground beef to the pot, breaking it into smaller pieces with a spoon or spatula. Cook the beef until it is thoroughly browned on all sides, which typically takes about 10-12 minutes. Drain any excess fat if desired. Stir in the cumin and smoked paprika, cooking for an additional minute until fragrant, allowing the spices to toast slightly.
  • Pour in both cans of diced tomatoes (undrained), the chicken or beef stock, and the drained red kidney beans (if using). Stir everything together thoroughly, ensuring all ingredients are well combined. Bring the mixture to a gentle boil, then reduce the heat to low. Stir in the roughly chopped chipotle peppers in adobo sauce, tomato paste, and the unsweetened cocoa powder. Mix until the cocoa powder is fully incorporated and no lumps remain. Allow the chili to simmer on low heat, uncovered, for at least 30-45 minutes to thicken and for the flavors to deepen. Remember, the longer this chili simmers, the richer and more complex its flavor will become. For best results, allow it to simmer for at least an hour, or even two.
  • Just before serving, stir in the juice of one fresh lime. This addition brightens the flavors and balances the richness. Taste the chili and season with salt and freshly ground black pepper as desired. Adjust any seasonings to your preference.
