Ingredients

 

  • 1 Package extra-firm tofu
  • 1/2 red, yellow and green pepper, sliced
  • 1 red onion sliced
  • 1 cup small button mushrooms whole
  • 1 plantain slightly overripe and sliced
  • 1 avocado sliced

BBQ Sauce

  • 1/2 large sweet onion
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp BBQ sauce
  • 1 scotch bonnet pepper, deseeded
  • 1 tsp thyme
  • 2 cloves garlic
  • 1 inch piece gingeroot
  • 1 tsp allspice
  • 1/2 tsp nutmeg

Brown rice

  • 2 cups water
  • 1 cup white rice
  • 1 tsp butter
  • 1 pinch salt

Instructions

  • Mix together all ingredients listed under the “BBQ Sauce” heading in a Magic Bullet or a regular blender until completely smooth. Set aside to allow flavors to meld.
  • Press the extra-firm tofu thoroughly to remove excess liquid. This is key for crispy tofu! Pat dry with paper towels, then cut the tofu into 1/2-inch thick strips. Place the tofu strips in a plastic bag or shallow dish with the prepared BBQ marinade, ensuring each piece is well coated. Let it marinate for at least 30 minutes, or even longer for deeper flavor penetration.
  • Meanwhile, add all ingredients listed under the “Rice” heading (water, white rice, butter, salt) to a rice cooker or a medium-sized pot on the stovetop. Cook according to package directions or until the water is fully absorbed and the rice is tender and fluffy.
  • Heat 1 tablespoon of olive oil on medium heat in a large skillet. Carefully add the marinated tofu strips along with any remaining marinade. Sauté for about 5-7 minutes until the tofu begins to brown and crisp up on all sides. Then, add the sliced bell peppers, red onion, and whole button mushrooms to the skillet. Continue to sauté for another 5-8 minutes, or until the vegetables are tender-crisp and the tofu is heated through and well-coated in the sauce.
  • In a separate pan, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the sliced plantain and fry for 4-5 minutes per side, or until golden brown and caramelized. The plantains should be soft in the center with slightly crispy edges.
  • To assemble your vibrant Caribbean BBQ Tofu Bowls, spoon a generous portion of the cooked rice into each bowl. Top with the sautéed BBQ tofu and vegetable mixture. Notes

For the crispiest possible tofu, make sure to press out any excess moisture before marinating. The drier the tofu, the crispier it will become!
